Our family Christmas dinner was last night. What's left over is ham and roast sweet potatoes. Sweet potato was turned into a sauce with the gravy & ham was crisped in a pan and tossed through fettuccine and tomatoes. Sweet potato fettuccine with crispy ham. #dishbyduy

Found some fresh abalone at the market. Braised with chicken stock, ginger, soy and Chinese wine. Stock reduced and sliced abalone is placed on poached iceberg. #dishbyduy

Swordfish is amazing simply panfried. It needs to be eaten right away because I think temperature is critical with this fish. When perfectly cooked it is silky and buttery. Enhanced by a simple sharp mustardy beurre blanc and purple asparagus which turns green after cooking. #dishbyduy

Worthwhile getting the whole duck & sectioning it up yourself. Here: duck legs spice-salted then steamed & crisped up in oven. Bones used in the cumquat miso sauce. Fat used to pan-fry potatoes, and as a fat for the watercress vinaigrette #dishbyduy

These beautiful porcini mushrooms from the market this morning were lightly pan fried and tossed through plin pasta filled with truffle in a light Gorgonzola cream sauce. Really tasty. #dishbyduy #milan The porcini held its own in all of that and everything kind of worked with the other. With the smallest amount of parsley for a bit of freshness.

Doing some baking this afternoon. Date scones. Really easy: 2c self raising flour, pitch salt, 1/2c cream, 1/2c lemonade, a handful of chopped dates. Fold through, don't overwork, cut into 8 with scone cutter or knife, brush with milk, bake at 180c 20 mins. #dishbyduy

The only thing left in the fridge today was mushrooms and eggs. So I wok tossed the mushrooms in olive oil, butter and thyme, scattered in some slivered almonds, salt & pepper and truffle oil. Meredith Vale goats cheese, 4 minute poached egg, chives from the garden and I rescued a radish from the depths of the fridge veggie bin. #dishbyduy #brunch #relax #dayoff

The dried shiitakes and chinese sausage in the pantry gave me an idea for breakfast. Savoury sticky rice. Glad I had that thought bubble now... #dishbyduy also added dried longans, dried salted turnip, ginger, shallots and sake. Seasoned with soy, oyster sauce, sesame oil, and white pepper.

There's an awesome butcher in one corner of Vic market that sells Cape Grim Beef. This is their scotch fillet. Simply griddled and brushed with oyster sauce. Served with mustardy watercress leaves lightly dressed. (red wine vinegar, tsp sugar, dash soy sauce, French shallot and good olive oil). Heaven. #dishbyduy

I made this lovely pink chicken liver parfait yesterday in the sous vide 69c 90 mins. Served here with a drizzle of honey and cracked pepper on toasted sour dough. OMG. It's delicious. #dishbyduy Try it, I thought honey was weird but is a perfect counter balance.
